Instead of just roasting your spuds this Christmas try this.

Roasted Rosemary Potatoes

1 kilogram new potatoes – washed and cut into 2cm cubes
3 tablespoons olive oil
2 tablespoons grated cheese
1 tablespoon chopped fresh rosemary
Salt and pepper to taste

Preheat the oven to 220 degrees.

Line a baking dish with aluminum foil and heat it in the oven. The potatoes will cook more evenly if your baking dish is hot.

Mix all the ingredients together in a bowl. Season to taste.
Spread the mixture over the baking dish.

Bake until the potatoes are golden brown and tender, about 40 minutes – remember to turn them about half way through.
