Baked Falafel

1 can chickpeas – drained
¼ red onion – chopped
2 tablespoons oil
1 teaspoons minced garlic
Salt & pepper to taste
Optional: ½ cup fresh coriander leaves
¼ teaspoon ground cumin
1/8 teaspoon cinnamon

Preheat oven to 180 degrees. Line a baking dish with baking paper or coat with oil or you can use a frying pan.

Combine all the ingredients in the food processor or with a hand blender until smooth.
With your hands or a spoon, scoop out about two tablespoons of the mixture and shape it into a patty about five centimetres wide and 1cm thick.

Place each patty on the baking tray.

Bake for 15 minutes, then carefully flip them over and bake for another 15 minutes, until the falafels are lightly browned on both sides.

Falafels go well with a salad or in a pita bread pocket with vegetables and salad dressing.
