THIS recipe works well with both potatoes or kumara, or a mixture of both.

Mashed Potato Cakes

1 small onion – finely diced
350 grams frozen vegetables
(we recommend Watties Super-greens, which contains peas, broccoli and spinach)
850 grams potatoes
1 teaspoon butter or milk

Optional

150 grams trimmed bacon rashers

Cook the potatoes in lightly salted water. Drain and mash with the butter or milk. Heat some oil in a frying pan and cook the onion until soft.

Add the frozen vegetables and stir-fry until cooked. Remove from the pan and place in a bowl.

If using the bacon, fry or grill the bacon until crispy, chop it into small pieces and add it to the vegetables. Add the mashed potatoes to the vegetable mix – season with pepper and mix well.

Bring the frying pan back to heat and add a little more oil if needed.

Drop large spoonfuls into the pan and cook each side until golden. Serve with sausages or scrambled eggs.
