A SLOW cooker can make cooking your winter meals a bit easier.

Adding a packet of your favourite flavour of powdered soup mix to meat and vegetables is great way to ensure a tasty casserole.

Chicken or Pork Casserole

1 leek
1 carrot
1 onion
350 grams potatoes
6 chicken thighs
or about 750 grams of pork cut into pieces
1 packet soup mix
500mls water

Peel and roughly chop the vegetables and place with the meat into the slow cooker. Pour over the soup mix of your choice mixed with the water. Season to taste

If you wish to add herbs for some extra flavour go ahead, sage or thyme works well. Turn the slow cooker on low for six-to-eight hours.

Can be served on its own, with rice or with steamed green vegetables.
