HAVE you caught a fish that’s not quite big enough to feed the family? This recipe will make your fish go further.
Fish Batter cakes
You will need
400 grams of fish
1/2 cup of milk
1 cup self-raising flour
1/2 teaspoon curry powder (optional)
1 teaspoon green herb stock (optional)
Remove all the bones from the fish. Cut into small cubes – about a centimetre wide.
Beat the egg, milk and seasonings together with a fork until mixed. Add the self-raising flour and the fish. Mix gently until combined.
If the batter is too runny, mix in a little more flour. In a frying pan, add the oil – enough to be about a centimetre deep – and heat. The oil needs to be hot for the best results.
Fry the mixture in tablespoon lots, turning once. Your battercake is ready when the batter in the center of your cake is firm and the fish is cooked.
Serve immediately with a salad or your favourite vegetables.
Note: If you do not have the curry powder and the herb stock just add salt and pepper to taste.
