Easy Vegetable Quiches

For one person

3 slices bread with crusts removed
Marmite or Vegemite to spread
¼ cup grated cheese
1 egg
Salt and pepper to season
2 teaspoons chopped parsley, chives or spring onions
¼ 410 gram tin creamed corn

Optional

1 tablespoon finely sliced red or green pepper
Diced bacon

Preheat the oven to 190 degrees. Lightly grease muffin tins and spread one side of the bread with Marmite or Vegemite. Place in the muffin tin – Marmite side facing up.
Lightly beat the egg, add remaining ingredients and spoon into bread cases. Bake for 15 to 20 minutes. Any leftover quiches can be reheated the next day.

Variations:

Omit the Marmite and replace the creamed corn with 95 gram tin of tuna or salmon. Flavoured tuna such as tomato and basil makes a tasty filling.

Remember, leftover creamed corn can be frozen.
