THIS  can be a meal on its own or serve it with your favorite sausage.

Silverbeet and Noodles

Serves 4

4 cups water
150 grams silverbeet leaves
200 grams instant noodles
2 teaspoons oil (peanut is nice)
2 teaspoons soy sauce
2 tablespoons tomato sauce (a tomato-chilli sauce adds a little zing).

Slice the silverbeet, removing the stalks if preferred, or finely slice them.

Bring the water to the boil, add the silverbeet and cook for one-to-two minutes or until just tender. If you are using the stalks add them first and cook for a few minutes before adding the leaves.

Remove the silverbeet from the water with a slotted spoon, place into your serving dish and keep warm.

Add the noodles to the boiling water and cook according to the instructions on the packet. Drain and add to the cooked silverbeet.

Combine the oil and sauces. Add to the silverbeet and noodles and toss gently to combine.

Serve hot.
