EVEN on these hot evenings, a hot meal is inviting. This recipe is one you can whip up quickly with minimal time spent standing over a hot stove.

Nachos

400 grams beef mince (Lean is best)
400-gram can Mexican-style tomatoes
420-gram can chilli-flavoured beans
Corn chips
Grated cheese

Brown the mince in the frying pan – you may wish to use a dash of oil. Add the tomatoes and beans.

Simmer for 10-to-15 minutes until the mince is cooked and the beans are hot. Season with salt and pepper to taste.

Serve over corn chips. Scatter the grated cheese over the top.

Optional: Add a cup of frozen vegetables, such as peas, beans or mixed veges at the same time as the tomatoes.
