THIS would be a lovely starter for your Christmas meal .

Prawns and Avocado Salsa

Serves 4

800grams prawns with their tails on and deveined

3 Tablespoons of olive oil
2 cloves of garlic – finely chopped
1 teaspoon ground coriander (fresh works well too)
1 teaspoon ground cumin
1 teaspoon chilli flakes or 1 chilli deseeded and finely chopped
Lemon wedges to serve

For the Avocado Salsa

1 large tomato – chopped
1 avocado, peeled and chopped
½ red onion – finely chopped
1 Tablespoon lime juice
Salt and pepper to taste

Method : Put the prawns, oil, garlic, lime juice, coriander, cumin and chilli in a bowl and mix. Refrigerate for one hour.

To make the salsa, combine the tomato, avocado, onion and lime juice in a small bowl. Season to taste with salt and pepper.

Cook the prawns for three-to-four minutes, turning until the prawns are pink. Season with salt while cooking.

Serve the prawns hot with the salsa and lemon wedges on the side.
